I have been imparting my limited cooking skills to the girls, and today we learnt how to make my Carb-Free Lasagne. It is hardly a recipe as it is just a few steps but here goes, in my non-pro words with non-pro skills – but it is easy and quick to make (plus limited pots, pans and dishes required).

Set your oven to 180 degrees, place a little bit of olive oil in a frying pan to avoid sticking and then add the mince meat, start cooking on medium heat. Well the mince is cooking, using a Guillotine cut the courgettes (use 4) and lay half of these into a flat oven dish. You will then want to add the Napoli sauce to the mince at this time, and possible extra salt and pepper if you prefer. I then get busy cutting the peppers (red, yellow and orange – I avoid buying the green ones), and layer half of these on the courgettes, then add half the grated cheese. Now add the mince on top, more peppers, more courgettes and then the rest of the cheese. Place in the oven for 15 minutes and then turn up the heat to 220 with the grill and leave for another 10 minutes. Done!
