Last week Tuesday was a public holiday and we were in Andermatt for the long weekend, so when it came to making dinner Tuesday night, I had given it zero thought. I initially thought we would have grilled cheese but unfortunately we had no bread and very little cheese. I then figured we would have “breakfast for dinner” as there were 6 eggs and then inspiration hit! Why not make a quiche. Sure thing? I have never made one before…

Fortunately, this recipe was so easy and Liam had accidentally purchased pastry dough earlier in the week instead of phyllo pastry, and we had so many vegetables (spinach, mushrooms, peppers, tomatoes) lurking in our fridge that it ended up being a huge success. But if you know me that means the next one will be a disaster – I am a hit or miss baker!
