To keep the girls busy this holiday, we are making different salads each night. Zara researched this one and it tasted great!

3 sweet potatoes (if you prefer peel)
3 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
2 bunches arugula, thick stems removed
1/3 cup crumbled feta cheese
½ cup walnuts

1. Microwave the sweet potatoes. Pierce the sweet potato skin with a fork 5 to 6 times. Place the sweet potatoes on a microwave-safe plate and microwave for 5-10 minutes—five minutes to cook one sweet potato in the microwave, and add two minutes for each additional potato—rotating them halfway through
2. In a large bowl, whisk together oil and white-wine vinegar; season with salt and pepper. Add sweet potatoes, arugula, feta and walnuts. Toss to combine and serve immediately.
